Pork and Raisin Empanadas
Servings: 12 Empanadas
Easy to make, hot or cold, these delicious empanadas are made with a sweet & savory pork and raisin
filling, excellent for the holidays.
The empanada dough can be purchased at any specialty Hispanic grocery store, these dough disks
come usually frozen and are rolled-out and shaped ready for you to create delicious empanadas. There
are two types of doughs available on the market, one is for frying empanadas and the other is for
baking, both are usually available side by side in the grocery freezer store so heads up! be sure you
pick the one you are wanting to use, both are delicious and fun to make.
Ingredients:
1 package store bought empanada dough
1 lb. ground lean pork
2 Tablespoons olive oil
salt and pepper
1 cup onion diced
4 garlic cloves mashed
2 Tablespoons tomato paste
1 Tablespoon paprika
2 Cups chicken broth
1 cup raisins
½ cup green olives sliced
½ cup chopped fresh parsley
Directions:
Heat oil in a pan
Add pork, salt and pepper to taste, sauté for 2-3 minutes while breaking up the pork with a wooden
spoon. Add onion, garlic, tomato paste, paprika until onion has softened
Add chicken broth and raisins, bring to a boil, lower heat and let it simmer together until broth has
mostly dried out, add the olives, parsley, and a little of chopped pickled jalapeños if you like spice, sit to
the side to cook.
Add filling into the center of the dough, egg wash around the edge of the dough and fold over, using a
fork to secure the edges
Bake or fry in the oven according to package instructions.
