Spicy Summer Mixed Berry Jam


Yield 4- half pint jars



Summertime is a great time to enjoy fresh local produce and why not make something with

fresh berries.

Fresh strawberry jam to fruit salad, nothing says summer quite like the succulent fresh

berries, and the added red pepper flakes to this Jam recipe adds a little zing making you

crave more.

What’s more, these sweet berries are also packed with vitamin C, fiber and potassium.

This mixed berry jam is a great addition to any meal choice.


Ingredients:

2 cups raspberries

2 cups blue berries

2 cups blackberries

3 cups strawberries

3 cups granulated sugar

¾ cup lemon juice

¾ tsp red pepper flakes


Directions:

Place berries and sugar in a large bowl and gently stir. Let rest for 10-15 minutes.



In large nonreactive saucepan, gently stir the berries together along with the lemon juice. Bring

to a boil over medium-high heat, reduce the heat to medium and cook, uncovered, stirring

frequently and removing any foam that comes to the top and until the jam has thickened.



Continue cooking stirring frequently in medium heat to archive the desired thickness, about 15 minutes.



It will continue to thicken a little more as it cools.

*Note-to make the jam thicker, a corn starch slurry can be made using equal parts corn starch and cold

water. Add to hot jam until desired consistency is met.
